I think the reason that ARM is a particular favourite here is that it's the only one to have variants that are comparable to high-end 8-bitters? So, if you're straining at the limits of a (high-end) 8-bit processor, it's a relatively small step up to one of the low-end ARMs. I don't think that any of the other 32-bit architectures offer that - do they? It seems to me that other 32-bit architecture are much more of a "quantum leap"? The other thing about ARM, of course, is that it is not just a single manufacturer - just like the 8051/2.
