I doubt that 8K samples will be enough, though. I suspect it will be necessary to detect a trigger event of some sort in a continuous sample stream yet have a considerable buffer depth so one can "see" the behavior of a couple of digital events,

make a 'logic analyzer' only record (with a timestamp) when things change.

still not 'rocket science' you should be able with a f12x to get a sample rate in the MHz range which for Power supply and Reset should be sufficient.

AGAIN I DO NOT RECOMMEND THIS it is spending time/money on a soultion that severely lack useability for anything else. It is, however, fun to discuss it.
