and perhaps you don't need the IIC either.

If you have a PC master and two 805x-type slaves, can't you connect each one to the PC, one via COM1 and one via COM2, as you suggested you might in your initial post?

That way the master controls everything, and the slaves respond, but there need be no communication between the two slaves, except as needed through the master.

It might not be too difficult.
