To learn the 'C' programming language, I (among others) would recommend that you learn the language first on a PC (or similar).

Once you have learned the language, then you can move on to applying it to the 8051 - or any other microcontroller...

In a fast-moving area like electronics, be aware that books are inevitably out-of-date by the time they reach the shelves. The general principles that they teach will be good, but any references to specific products and suchlike will almost certainly be outdated.
Publications about the 8051 do, sadly, seem to be particularly prone to being seriously behind the times!
