the multiple ADCs will increase cost.


For Your particular task i will choice single ADC and junction summing box.
Thinking for future - D-loadcell have unbeatable advantages.
Especially for plant installation D-loadcell's damage will reflect in
very short break time for system recovery, this means money.
Probably on market D-loadcell are expensive.
DIY D-loadcell will cost <20 USD in parts and some time/money/efforts for development.

On other hand - reliable selected and installed 'analog' loadcells/junction box/ADC box can ensure system life as long as component's life - as in D-loadcells.


So - use single-channel ADC today and think about future.
As You mentioned - You have allready HMI and actuator's interface ready.
For these 5-6 days in this discussion You has enough time to buy ready-made indicator, connect it and even to start plant!
