The requirement of a USB host would probably be enough reason to avoid the 8051 family.

Look at an ARM chip in the NXP LPC23xx family - note that the smaller 23xx chips don't have the USB host. Or look at the LPC24xx family, or the new LPC17xx family.

For bigger chips, you could look at some Atmel chips and the NXP LPC32xx. The 32xx chips has up to 7 UARTS.
