Not sure if it is has been covered but could you use an infrared camera? There is probably a gazillion psots on the net on how to convert your regular camera to an infrared one, so that you can see if it is feasible.

The bony bit would be a different colour to the soft tissue.

Not very 8052'ish but you could overlay the colours somehow with the mould that you make to see where the slop can be allowed, or whatever,

Just a thought

(what about an xray?)
