Really, really fast A/D converters are in fact available from e.g. National Semiconductor.
Custom built SiGe or GaAs chips could provide even higher speeds.

"Bandwidth" is normally defined as the frequency where the response is down by 3dB. So if that frequency is not 1GHz, the claim is false and it's a lie, rather than a cheat :-(.

Nothing wrong with that; I have a Tektronix 7704 mainframe with a 7S14 sampling plugin (a design that dates back to the early 70's!) that does indeed have a 1GHz bandwith, even if only for repetitive signals. Over the years it has proven to be a very useful piece of equipment, for it allows me to see things my 100MHz/1GSps TDS2014 does not show me (like the overshoot on a 3V/ns edge at the other end of a 5cm of PCB track).
