If you oversample the input signal, as you suggest, and use an ADC that's 4x as fast as the signal you're sampling, but sample at different phase each time you "sweep," you continue to increase the amount of information you have about your signal and can incorporate that into your displayed waveform. The real crux is precise triggering. They once used tunnel diodes for this. The challenge for you is to figure out why they did that rather than any of a number of cheaper/simpler ways.
