Some processors may be better prepared to do that than others, but any conventional processor still is only executing one instruction at a time--at least that was still the case last time I paid attention to the latest innovations in CPUs. :) We're currently planning on doing video and everything with a single 8052; well, a single Dallas DS89C420. Every indication at this point is that the MCU will be able to handle the video and all the other tasks with no problem and there'll still be enough processing power left over after handling video, Ethernet, PS2 keyboard and mouse, that the remaining instruction cycles will still end up executing a program faster than a traditional 12-clock 8052. The idea is also that the system be modular so if, in the future, someone wants to implement an external video that doesn't require the processor to generate the video signal, that will not be difficult to implement.
