I don't think that there is a 8051 with ADC in DIP package.

Have you tried Keil's parametric search : http://www.keil.com/dd/search_parm.asp

NXP has a LPC93x, with ADC and available in a 28 pin PLCC package. That could be used in a socket with pins, or in a adapter board, if conversion to DIP is important.
