I haven't tried any 8051 chips from Freescale. But I have been using their MPC (PPC) processors, and am looking at their ARM processors. I don't think you will get into troubles if you go for a Freescale processor. Other issues are more important to consider, such as availability, cost, peripherial devices, supply voltage, current consumption, ...
