I don't know how well it actually achieves it, but isn't this what Keil are aiming at with their AGSI (Advances Generic Simulation Interface)?

Might be worth a look for some ideas, if nothing else...?

And, of course, the Keil Simulator does do simulated serial IO via the PC's COM port - so you can either do a cable connection to another COM port and hypoterminal, or find a utility that does it virtually (I'm sure I've seen one somewhere...)
