If there's an FPGA, you can, and should, leave out the MCU.
The MCU is interesting for this sort of thing if and only if it can do the WHOLE job without external hardware. why? the screen itself is quite expensive, so what if the MCU cost $5 saving on the oregano ($0.10) when you have $20 worth of steak makes no sense. what would you rather have a monitor that cost $100 and works or one that cost $50 and don't?
