The Analog Devices ADuC8XX microconverters may be overkill for your application, but I found them nice and easy to use. I'd also expect them to stay in production for a while. They are 1 cycle cores and come with a ROM bootloader. I like their clocking scheme as they run of a 32.768kHz crystal.
