Which MOSFET(s) can I use for these range?
For mosfet selection there is a great parametric selection table at digikey, you can use the table regardless of where you decide to buy.

What should be the drive circuit using MCS51? I have never used MOSFETs before
you will need some hefty defty interface to drive the gate capacitance, many possibilities exist.
