Hi,
My favourite one...No seconds thoughts: It is AT89C52 / AT89S52.

Main reasons:
1. Easily available, here in Mumbai: both are available. And they both are NOT re-cycled, they are fresh ones.
2. Cost is Rs.35/- (Less than a $1).
3. Programmer : Asim Khan (Many thanks to him), built it, and developed "n" number of products using these CPUs.

And if some more flash/RAM is required, go in for AT89C55WD -> P89C61X2/P89V51RD2 very easily (Upward scale-ability). If small size is required use AT89C2051 easily (Downward scale-ability).
In so many years, only for a couple of products I had to go beyond them, I had to use C8051F040, and DS80C320. Other than that, it has always been AT89C52/AT89S52.
