My two favorites are the Philips, now NXP P89668 and the SILabs f12x/f13x series simply becuase they are the true single chip controllers (penty of RAM, 8 ports, PCA, IIC ...)
I also like the NXP LPC9xx because they are cheap enough to do multicontroller setups.

If the above sound contradictory it is not. "single chip" as in not needing peripheral chips and "multichip" as in division of labor.

My nostalgic recollections are the scars of my fingers from touching the original steam driven ones. Also, in those days you had to content with some obnoxious peripherals till the first PLDs with a bit more than the 22V10 cane around.
