You could give gigabit ethernet a shot using your choice of fpga + phy, embedded pc, whatever. There are lots of cute cores for HDL based MAC layers. BSD sockets are fun and easy (though if you're working in a windows world...well, I'm not going to continue this thought...) so PC side stuff would be relatively trivial. Xilinx has a nice spartan 3 dsp kit with a gige phy + dram which would possibly be convenient for implementing such a thing...
