I am a 100% 4 layer guy, the problems I have seen from missing ground planes are too many to tell. The fact that you use a built-in a/d already has limited your ability re the extent of precision (# good bits), so do the best you can.

EXAMPLE: If you route so that everything but analog comes from the left and all analog comes from the right with an invisible dividing line through your board (and the processor) you have, in effect, made two ground planes that just happen to be connected with a trace as wide as your board.
