There is no reason why you cannot do what you want. As to whether it is a 'good idea' really depends on how much effort you want to expend. Personally, if I was to do as you describe, I wouldn't use an 8051, I'd probably use something like an ARM7 or Cortex M3 based device, in fact, recently I ported a Z80 emulator to a Cortex M3 based device and had it run CP/M80 with the filesystem on a micro SD card. Why? Just a bit of nostalgia and wanting to see what the performance would be like. The only assembler code involved was on the Z80 side!
