Some lecturers are fools. Some are just a bit "evil"/"clever" and intentionally spreads a bit of disinformation to get the student to either solve a harder problem (can be quite rewarding) or to check if the student spends own time actually reading up on the task and possible solutions.

Anyway - 16 bit needs lots of pins if you transfer the data in parallell without any multiplexing. That is a big reason why many ADC have serial interfaces instead. Normally SPI or I2C. SPI is normally the easier route if your processor doesn't have I2C support in hardware.
