You are wrong to say that the 8051 doesn't have a 16 bit ADC as the ADuC847 from Analog devices does. They also have a 24 bit ADC in the ADuC845, which has very impressive performance. I would strongly recommend using one of these devices.

As Andy suggested, and ADC with SPI or IIC is also a possibility. Serial interfaces don't couple as much noise between analogue and digital signals, and can also be optically isolated.

You haven't mentioned conversion speed. Do you know what you are after?
