I am doing so since I have a variable load (25kg max) on a load cell (having the output voltage entering the ADC), and I want a reading change of +/- 1 gram, and so a 16 bit resolution is needed.

I never heard of I2C or SPI connected. I will check them out tnx. The reason I thought of using the 8255 is since i need ports (2 for 16bit) and having the micros other ports connected to relays and sensor, etc
