As an end in itself, yes - it's an interesting challenge.
As a way to use-up a pile of 89S5x chips - maybe. But as a way to produce a useful product - there are, surely, better ways?! A bit like making an 8051-based calculator: sure, it can be done; and there is plenty to be learned from the exercise - but it's not the way to go if you actually want a calculator!
