Can you not find a 1x16 header to solder onto the LCD board? You should be able to get ribbon cable crimp-on plugs mated to whatever headers you're using. I know you've seen the crimp-on plugs I'm talking about. They have the self-piercing contacts (a sort of miniature version of the telco punch block contacts) that allow you to lay the ribbon cable in situ and make all the connections at once by clamping the plug closed.
