If you have a stationary GPS receiver, and just plot its reported position against time, you will see that it "jitters" all around its true location.

eg, if I put a stationary GPS receiver in the centre of our "plot", the "jitter" covers about the whole plot - about +/-50m

GPS doesn't "switch" between satellites like a cell phone "switches" between cells.
It's making continuous calculations based on all the satellites that it can "see" with a sufficient signal-to-noise ratio (SNR).
