The typical solution in industrial environments is to use a flying capacitor to sample the cell voltage and to then disconnect the capacitor from the cell and apply it to your ADC. This provides excellent CMRR without precision resistors and is easy to calibrate. IIRC Linear Technology do a suitable switching chip.

Do not use optos, it will never work well.
