This will be observed with each circuit, whether fabricated on a breadboard or a soldered PCB: When you touch the wires, you add hum and stray capacitance (the latter can make an OPamp to immediately oscillate if you hit the output). That's nothing magic at all and not caused by the breadboard.

If your circuit is designed properly, then (knowing the restrictions of breadboard!) the breadboard will not turn it to work improperly. That's absurd.
