Although I am not an expert in the field, it appears that there is a similar tendency for these - the manufacturers push either embedded ARM or other 32-bit; and they simply have '51 core "on stock" as a "standard product... "

While I don't say you can't it maybe does not make too much sense.
There is a huge difference between a "(soft)core" and a microcontroller - and it's the peripherals. For the "embedded" version you don't need the (prechewed) peripherals - the reason to "embed" is to produce a configurator for THE peripherals. To produce a working core of the simplicity and functionality of PIC/AVR you don't need to go into deep compatibility (as long as you don't want to use the tools available for both, which may be not too spectacular or useful for general purpose use). Plus, Microchip and Atmel appear to be proud for their respective products and might be willing to defend agains a possible copy.

Besides, I believe, too many people share the dislike for PICs... :-)
