Like all such systems, the key is mounting the transducer very close to the heater, ie INSIDE the boiler.... Of course you can also monitor the things at the inputs, measure the flow etc, if you really want to be fancy.

I'll rephrase:

If, considering the value of your time, you can get the beast to work as you want for anything even remotely close to what the tankless heater saves you, I'll be surprised.

With the cost of tankless heaters, I would assume (OK, I DO know what that means) that the manufactureres have spent more than $100 on development of the control system and, as miserable as they are, it should be a herculean effort to get a tankless heater even close to "tanked performance', 'perfect' WILL be impossible. I actually once did something similar, controlling a very small water bath to .05 degree C and there was a minimum size of the exterior 'tank' to make it possible to achieve that.

"mounting the transducer very close to the heater" will give all kinds of other problems such as transfer from thye heater, not just the water.
