The Dallas High Speed Microprocessor User Guide says:
TI_0 (Transmitter Interrupt Flag). This bit indicates that data in the serial port 0
buffer has been completely shifted out. In serial port mode 0, TI_0 is set at the
end of the 8th data bit. In all other modes, this bit is set at the end of the last data
bit. This bit must be manually cleared by software. (and exactly the equivalent statement for TI_1)
The words "double buffered" do not appear anywhere in the 175 page document. I conclude that some chips may use double buffering of the "transmit" SBUF, but the 80C320 does not.

If I'm right, then waiting for one bit time after TI sets plus a moment for things to settle, and then turning off the driver seems OK...
