I would assume that there are programs out there (quite possibly even free ones) that can deal with/dump raw data from such media. It seems that it is a task that is both fairly common and not overly complicated, so there's no need to reinvent the wheel.

And once the data has been dumped to a file, it should be fairly simple to make an import filter for Excel, Matlab, Octave or whatever software is desired.
