A load cell will contain a strain gauge to measure deflection in the cell. The element that takes the load relys on the linear stress to strain relationship of a metal in its linear-elastic regime. The strain gauge changes resistance as it is deflected. Piezos are no good for measuring deflection as they produce a charge, which leaks away.
