I did some more searches.
I found this web site: http://www.mcufriend.com/easy.htm which I suggest you open in Google Chrome so that you get the immediate option to translate the page from Chinese to English. When translated it will show a "Programming Software Downloads" near the top of the page. That link allows one to download easy.rar which I opened with WinRar. Inside this archive is the program stuff for the Easy 51Pro v2.0 program. I opened the Easy51Pro.exe file in a hex editor and scanned through the file to see if there were embedded strings and prompts that would give a hint if the program supported an English version. I came away from that exercise seeing only a few ASCII readable words in strings which seems to coincide with the displays that you showed. So I say that that version is basically Chinese only.
