Taking your advice, I've ordered the -DK for this part, since it seems a quite sensible choice. At a cost of nominally $8, in a not-very-cost-sensitive application, it's not unreasonable, and it allows a number of constructive options, and replaces nearly all other components, aside from the LED driver. In fact, the functions are so simple that I doubt it will require even 500 bytes of code, aside from tables.

I'm thinking that it will replace my former colleague's "remote" analog board components, including the V2F circuitry, and will reduce component count on the "local" display. It's even likely that the remote board will be a version without the D2A, since the A2D conversion is the only function that's to be performed there and its result can be transmitted serially to the local board, which, in turn, can then produce the analog output and the display.
