#181469 - Does your system have a driven electrode?

Now since I want to send the entire signal to the processor, it has to be completely positive in nature.

So how can I achieve this up-scaling without having to modify the existing circuit and at the same time adding minimal intrinsic noise to the circuit?

Does your system use a driven electrode for common mode suppression? You might be able to set the reference point of the driven electrode feedback loop to a voltage where your ADC sees positive voltages only. This wouldn't even require an additional op-amp stage.
