There are some motors that use 560 VAC.

There are all sorts of motors for all sorts of different applications that use all sorts of different voltages!

In industrial installations here, 415V is standard - but specific applications will have their own requirements.

eg, the railways near here use 750VDC...

Why do you assume that it is for connection to a standard household supply?

Obviously, you could use a suitable transformer or inverter;
If you were building a large plant with major installations of these motors, you would arrange your electricity supply accordingly...
