What is the character of the signal you wish to process? What are the frequency, amplitude, range, impedance, etc? How significant are they? How do you plan to condition these signals?

I would be surprised if their overall range and amplitude is very large, but what about the required range, frequency, and precision? That will determine what sort of processor you need. Further, the conditioning requirement to make the signals intelligible has to be taken in to account. While the relative amplitude may be small, the signals will probably have to be differential, and referenced to different points. How will you manage that?
