EMG stands for Electromyography. As Erik rightly said, it's measuring potentials generated by muscle activity. It's like any other data acquisition, so it's not that scary.

I'm not planning to stick any needles. At least not for now. There are surface mounted electrodes as well, which I am planning to use.

Things like this is VERY SCARY "I am a novice" and medical diagnostics. What if the diagnose is wrong because the 'novice' did not take all into account?

I'm not going to deal with the EMG diagnostics part of it right now. So Erik, you don't have to worry about blowing someone's brain because of a wrong suggestion! :)

Basically,I want to learn a bit of DSP/DSC programming, since I have absolutely no experience with it.
