Giving the embedded device is web server is great for an "Ooh, look!" demo, but is not really scalable to large population of devices. Something user programmable -http://tibbo.com/products - for example. (but i used only non-programmable device). Note that both Lantronix and Digi have programmable devices. And there's also things like the Wiznet (8051 with on-chip etherhet) and plenty of ARMs with on-chip ethernet.
