That's probably not the one to use with 300 volts, and since I think you probably want a P-channel MOSFET, but ... look at the spec for threshold voltage, and for gate capacitance. Then consider that, assuming you use it as you show the IRF640, you'll probably need a multi-transistor circuit.

Now, there are MOSFET drivers available that will drive the IRF640 from a 5-volt MCU output. I don't recall whether the '640 is designed for greater than 300 volts, but it may be. Perhaps you will want to consider such a driver.
