Check out the AT89LP3240 from Atmel. This part has 32K bytes of program flash, 8K bytes EEPROM, 4352 bytes RAM and is available on PDIP-40 package. On top of all that there is hardware TWI, hardware SPI, 10-bit A/D and the part is a single clock cycle core capable of operating up to 20 MHz. Note as with most of the more modern parts this one has a Vcc range of 2.4-3.6V.
