Is your project hardware already designed?
If so, could you please post a schematic of it.
It will make it easier to assist you in your requests.

If your hardware platform is not designed yet, then there is some thinking to be done.

1. How will you get the sensor scale to a usable scale for the processor?
2. Which processor voltage will you use?
3. Which LCD will you use?
4. Which flash memory device will you use?

The rate you wish to acquire data, along with how much data, and what kind of accuracy you wish to achieve will all influence your choices above.

I believe this forum has members that will help you along (without too much chastisement) if you have specific questions for specific problems
