are there really MCU's out there that have 1V8 interface levels? With what do they typically interact?

The smaller pin count MCUs have 1.8-5.5v operation, but not many LPC have split IO Vcc, which may be what you mean, as they cannot afford the extra Vcc pin.

I remember that one ARM we used back in the day (about a decade back) wanted 1V8, 2V0, 2V5, and 3V3. I'm hoping they've figured out how to do with fewer supplies by now.

They've improved that now, that supply creep was back before they figured how to include On Chip regulators, and dual-oxide process for higher voltage IO rings.

The ABOV,Zilog,Silabs (Automotive) 8051's have 1.8-5.5V, done using on chip regulators.

5V is even making something of a comeback in 32 bit :

Nuvoton have ARM's with
Wide operating voltage ranges from 2.5V to 5.5V

Some even have 8051 flavour peripherals and external memory ALE.

Fujitsu have ARMs with 2.7-5.5V
http://mcu.emea.fujitsu.com/mcu_produ..._32FM3.htm

and the biggest MCU supplier, Renesas, offers the new
RX200 in 1.62 to 5.5V

5.5V gives better ADC noise floors, and allows you to drive the bigger Power MOSFETS with 5V PWM directly.
