... is, of course, that you are only characterising one particular sample at one point in time.
How do you know if that sample is representative? How do you know it's not at one extreme or the other of the manufacturing spread? How do you know how it'll change with age...? If the manufacturer doesn't characterise it in the datasheet, you have no guarantee that they won't make changes that don't affect the defined performance - but do affect the ESR.
