Unfortunately, we non-Hispanics have difficulty distinguishing between Mexicans, Guatemalans, Colombians, ... etc. My wife is Mexican and I know and have known many Mexicans (and others from Latin American countries), most legally here, some illegally--and none of them would be offended by being called by their nationality. They're quite proud of their nationality. I think they would only take offense if you called someone Mexican when they are Colombian, or if you called someone a Mexican because they look Mexican even though their family may have been Americans for several generations. Now my mother, who grew up in Chicago quite some time ago, did tell me that it used to be offensive to call a Mexican a Mexican, but I think that's no longer the case.
