There are some relevant differencies between the AT89C51 and AT89S51. Have you read the lines about the double data pointers and how to initialize them??

Also, a micro that can program its code memory by itself MUST have some sort of reset controller to provide a true reset during power up, power down and brown out conditions!!! I for myself use an external reset controller, like the MAX1232 and use its internal watchdog. Look here for a schematic and example code:
