My suggestion is to not try to use an 8051 type MCU for this. By the time you get around to being able to even make code to study the single line of pixels you will have invested so much effort into finding suitable components and getting them interfaced that you will begin to wonder what the heck you are trying to do. Then once you do try the coding you will find the limited memory architecture of 8051 type MCUs to hinder your ability to innovate in a meaningful way.

You should look seriously at one of the new ARM system-on-chip devices for this project. Some of these have on board video capture interfaces that allow connection of the low cost type video camera type devices found in many devices these days. One ARM controller that has capabilities like this is the TI part called the AM1808. There are others.
