You probably do not need to make an individual calibration for log potentiometers, but can get away with a configuration just saying "lin" or "log", and maybe the maximum resistance.

Yes, individual potentiometers may vary more, but the typical user of these potentiometers normally don't look on a scale but turns the potentiometer until they get the result they want. So it's enough that the program knows that it should take the value as is, or convert lin->log or log->lin depending on used potentiometer and what type of parameter the potentiometer is intended to control.

It is way more important that the ADC have enough resolution that it always gives step sizes small enough - even after the non-linear transform - that the user don't get angry with lack of resolution.

In short - you can either have a 50-step table or add a mathematical formula for the conversion. But the foot pedal user will not care - or even be able to notice - if you have calibrated the transformation or not. You can look at the datasheet for a potentiometer if you want just to look at a graphical curve of value as function of angle and use that as a general transform.
